Ingredients1 tbsp (15 mL) butter
3 cloves garlic, minced
1 chopped onion
1 1/2 tsp (7 mL) dried basil, oregano or Italian seasoning
Salt and pepper
1 can (796 mL) diced tomatoes with juice
1 cup (250 mL) reduced-sodium vegetable broth
2 tbsp (30 mL) all-purpose flour
2 cups (500 mL) milk
1 cup (250 mL) cooked brown rice or
mixed grains
1/2 tsp (2 mL) granulated sugar, (optional)
Chopped fresh chives


Preparation
In a large pot, melt butter over medium heat. Add garlic, onion, basil, and 1/4 tsp (1 mL) each, salt and pepper; cook, stirring often, for 5 min or until tender. Add tomatoes and broth; cover and bring to a boil over high heat. Reduce heat to medium-low and boil gently, covered, for 10 min or until tomatoes are very soft. Remove from heat.

Using an immersion blender in pot or transferring soup in batches to an upright blender, purée soup until smooth. Return to pot, if necessary. Whisk flour into milk; gradually pour into pot while whisking constantly. Stir in rice; cook over medium heat, stirring often, for about 5 min or until slightly thickened and steaming. Season to taste with sugar (if desired), pepper and up to 1/4 tsp (1 mL) salt.
Ladle soup into warm bowls and sprinkle with chives and black pepper if desired.

Tips
Use fun shapes of cookie cutters to cut croutons from whole grain bread. Toast the croutons, then sprinkle with shredded Canadian Mozzarella cheese and broil to serve with the soup for dunking or to float on top.
For a Curried Tomato Soup, omit the basil, add 2 tbsp (30 mL) minced gingerroot and 1 tbsp (15 mL) Indian yellow curry paste or powder with the garlic. Replace the chives with cilantro.

Ingredients
1 (750 g) large fennel bulb
10 plum (Roma) tomatoes, cored and halved (about 2-1/4 lb/1.125 kg)
1 large cooking onion, cut into 8 wedges
6 cloves garlic
2 tbsp (30 mL) melted butter
1/3 cup (80 mL) crumbled Canadian Feta cheese
1 tbsp (15 mL) finely chopped red onion
1/2 tsp (2 mL) freshly ground pepper
1/2 cup (125 mL) sodium-reduced tomato paste
3 cups (750 mL) sodium-reduced vegetable stock
1 1/2 cups (375 mL) 5% sour cream

Preparation
Preheat oven to 450 °F (230 °C).
Trim and coarsely chop fennel bulb; reserve 2 tbsp (30 mL) finely chopped fennel fronds for the topping.
In large bowl, gently toss tomatoes, fennel, onion and garlic with melted butter. Arrange vegetables (tomatoes cut side up) on large rimmed baking sheet. Bake for 40 to 45 min or until vegetable are lightly browned and caramelized, remove from oven, cool for 10 minutes.
In small bowl, combine Canadian Feta cheese, 2 tbsp (30 mL) of the reserved fennel fronds, red onion and pepper; set aside.
Working in batches, transfer half the roasted vegetables and any accumulated juices to food processor or blender; add 1/4 cup (60 mL) of the tomato paste and 3/4 cup (180mL) of the vegetable stock; puree until smooth. Transfer to medium saucepan, repeat with remaining vegetables, tomato paste and 3/4 cup (180 mL) vegetable broth. Stir in remaining vegetable stock and sour cream; heat over medium-low heat, stirring often until well combined and heated through.
Ladle into bowls and sprinkle with Feta cheese mixture. Serve immediately.

Ingredients

1 cup cooked rajma (kidney beans)
½ cup chopped onions
1 teaspoon chopped garlic
4 cups chopped tomatoes
¼ teaspoon chilli powder
1 tablespoon chopped basil
½ teaspoon oregano
½ teaspoon sugar
1 tablespoon oil
salt and pepper to taste

For the garnish

4 sprigs of basil

Method

Heat the oil, add the onions and garlic and cook till the onions are translucent.
Add the tomatoes and chilli powder and cook for few minutes.
Add 3 cups water and simmer till the tomatoes are cooked.
Blend the mixture in a liquidiser. Strain.
Add the rajma, basil, sugar, oregano, salt and pepper.
Serve hot garnished with sprigs of basil.
