Yield: 1 cup

Ingredients:

1/4 cup mustard seeds
1/4 cup dill seed
1/4 cup coriander seeds
2 Tbsp. crushed chili peppers
2 Tbsp. crushed bay leaves
1 Tbsp. celery seeds
1 Tbsp. white peppercorns
1 tsp. black peppercorns

Preparation:

Combine all ingredients and store in an airtight container in a cool, dry place. Place desired amount of spices in cheesecloth and use in recipes.

2 tablespoons ground cumin
2 tablespoons ground turmeric
2 teaspoons cinnamon
2 tablespoons ground coriander
1-1/2 teaspoons ground ginger
1 teaspoon dried mustard powder
1 teaspoon paprika
1/2 teaspoon ground cardamom
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
1/8 teaspoon white pepper

Preparation:

Combine all ingredients and mix well. Store in small airtight container in cool place.

2 Tablespoons marjoram
2 Tablespoons oregano
2 Tablespoons rosemary

Ingredients:

1 Tbsp. onion powder
1 Tbsp. garlic powder
1 Tbsp. dried parsley flakes
1 tsp. dried basil leaves
1 tsp. dried thyme leaves
1 tsp. dried marjoram leaves
1 tsp. white pepper

Preparation:

Mix all ingredients well, and store in cool dry place up to 6 months. One tsp. mix contains 1 milligram of sodium.

Ingredients:

1/4 cup dried oregano leaves
2 tablespoons fennel seeds
2 tablespoons dried crushed lemongrass
1 teaspoon black pepper
1/2 teaspoon salt

Preparation:
Combine all ingredients in a spice grinder or coffee grinder. Grind to a fine powder, bottle in an airtight container, and label. Store in a cool, dry place. Yields about 1/2 cup. Use within 6 months.

Ingredients
2 cups milk (whole or 2% milk works best, low fat can also be used)

2 tablespoons white vinegar
¼ teaspoon garam masala
Pinch of ground coriander
½ teaspoon salt


DirectionsHeat milk in a saucepan, making sure the milk does not come to boil but just heats up till small bubbles form around the edge of the milk.
Turn off the flame and stir the flavorings and seasoning into the milk. Next add the white vinegar OR lemon juice, as per the recipe.
The milk will instantly curdle when the white vinegar or lemon juice is added to it. Leave the milk to completely separate into curd and whey for 5 minutes in the saucepan.
Lay a double layer of clean cheesecloth or muslin cloth on a strainer or colander. Drain the curdled milk through the strainer, discard the whey (watery yellow strained liquid) and leave the fresh cheese standing on a colander, to drip into a bowl for 30-45 minutes.
Note on Paneer consistency: The hardness of the cheese will depend on how well it has been drained. So based on intended use of the cheese; drain for only 20-30 minutes for softer spreadable cheese, and for harder well-set cheese, drain for 45 minutes to an hour.
Once drained, lift and twist the ends of the cheese cloth along with the cheese, and set it in a plate, add another flat bottom plate on top and lay weight on it (about ½ lb of beans, pack of frozen peas or a book, all work well.)
Refrigerate for 3-4 hours before consuming as desired.


Serving Ideas for Paneer with a Hint of Warm Spices
• Cut into dices and add this Paneer to your favorite curry like Palak Paneer (spinach) or Aloo Mutter Paneer (potato & peas.)
• Stir fry Paneer with a hint of cayenne pepper and cumin along with assorted vegetables.
• Spread coconut cilantro chutney on sliced bread and add slices of Paneer for a delicious Paneer Chutney sandwich.
• For a quick party appetizer, set the Paneer in a round shape, drizzle olive oil, sea salt and fresh cracked pepper over it, served as a spread along with crusty baguette or crackers.

Ingredients
2 cups (500 mL) of shredded Canadian Old Cheddar
1/4 cup (60 mL) softened butter
1 tbsp (15 mL) finely chopped green onion
2 tbsp (30 mL) sherry Slices of cucumber or
zucchini
Red bell pepper or paprika or olives, to garnish


Preparation
Combine Canadian Old Cheddar with butter and green onion. Add sherry. Spread on slices of cucumber or zucchini. Garnish with sweet red pepper, paprika or olives.

Ingredients
1/4 cup poppy seeds

1/2 cup melon seeds-dried and peeled
1/4 cup almonds
2 Tbsp fennel seeds
2 Tbsp dried red rose petals
1.5 tsp peppercorns

Method
Grind all the ingredients together.

Mix with milk and serve chilled.

Ingredients
1/4 cup dried, powdered ginger

1/4 cup dried, powdered garlic
2 Tbsp black pepper
2 Tbsp chaat masala
1/4 cup garam masala
1/4 cup powdered red pepper
1/4 cup kasoori methi
3/4 cup salt
1/4 cup dried, powdered onion
1 tsp powdered red colour (optional)

Method
Mix all the ingredients, blend in a blender and  store in an air-tight jar.

Ingredients
2 cups whole red pepper

1 1/2 cups coriander seeds (dhania)
2 Tbsp mustard seeds (sarson)
3 Tbsp cumin seeds (jeera)
4 tsp pepper corns (sabut kali mirch)
2 Tbsp fenugreek seeds (methi dana)
2 Tbsp husked split black gram (dhuli urad dal)
2 Tbsp bengal gram (channa dal)
2 Tbsp yellow lentils (arhar dal)
2 Tbsp rice
2 Tbsp asafoetida (heeng)
2 Tbsp turmeric powder (haldi)
1/4 cup dried curry leaves (kadi patta)

Method
Roast all the ingredients, except the turmeric powder, till very slightly coloured.

Remove from the heat and cool, and grind to a powder and mix in the turmeric powder.
Store this masala in an airtight jar
To Make Papri Chaat Masala:
8 tbsp - freshly ground coriander powder
2 tbsp - freshly ground cumin powder
2 tbsp - garam masala powder
1 tsp - black salt
1 tbsp - yellow/red chilli powder or to taste
1 tsp - salt


Method
Mix all ingrediants

Ingredients25 gm green cardamoms
25 gm whole black peppercorns
25 gm shah or kala jeera
25 gm patthar phool
25 gm tamal patra
25 gm badal phool
25 gm java patra
20 gm cloves
100 gm fennel seeds
25 gm cinnamon
90 gm split husked Bengal gram
100 gm turmeric -whole
100 gm husked sesame seeds
500 gm dried coconut-chopped fine
1/2 a nutmeg
100 gm cumin seeds
250 gm refined ground-nut oil

Method
Saute all the ingredients in the oil over low heat, till very slightly colored.

Cool and then grind to a powder.
Store in an air-tight jar.

Ingredients
100 gm almonds, shelled and coarsely powdered

75 gm pistachios, shelled and coarsely powdered
20 cardamoms, shelled and coarsely powdered
1 Tbsp saffron, lightly roasted and crushed
1/2 nutmeg, grated

Method
Mix all the ingredients and store in an airtight jar.

Note: Use 1 tsp of the masala for 1 cup of milk along with sugar to taste.

Ingredients
4 cups coriander seeds

1 cup dry coconut
1/2 cup white sesame seeds
1/2 cup black sesame seeds
1/4 cup cumin seeds
4-5 tsp black cumin seeds
2 teaspoon asafoetida (heeng)
1 Tbsp cinnamon - broken into tiny pieces
3-4 cloves
1 black cardamom - seeds only
3 dry red chilies
1 tsp turmeric powder
Salt to taste
1 Tbsp oil

Method
Roast all the ingredients except coconut and coriander seeds in oil. Keep aside.

Roast coconut and coriander seeds separately without oil.
Now grind all these items together.
Let it cool and store in an airtight container.

Ingredients
150 gm cumin seeds

50 gm black cardamom seeds
25 gm cinnamon
25 gm cloves
25 gm peppercorns
4 bay leaves

Method
Sun all ingredients or place them over an oven to rid them of any moisture.

Then grind them to a powder in a food processor.
Store in an airtight jar.

1 cup coriander seeds

1 1/4 cups cumin seeds
1/2 cup thymol seeds/ ajwain
1/2 cup mango powder
2 1/2 tsp garam masala
1 1/4 cups powdered black rock salt
4 tsp powdered black pepper
2 tsp (approx) citric acid
1/2 cup dried and powdered mint leaves



Method
Roast the coriander, cumin and ajwain in a heavy-based pan till dark brown.

Remove from pan and leave to cool.
Put all the ingredients together and powder fine, in a processor.
Store in an airtight jar.

16 green cardamoms

Method
Dry roast all the ingredients.

Cool and powder.
