Ingredients
2 cups canned chickpeas, rinsed and drained
1/2 cup cashews, lightly chopped
2 large carrots, finely grated
1 scallion, finely chopped
3/4 cup cilantro, chopped
1 clove garlic, minced
2 tablespoons ginger, minced
1 teaspoon cayenne
2 teaspoons paprkia
1 lemon, juiced
1/4 cup olive oil
salt and pepper as desired


Instructions
1.In a large bowl, combine all ingredients. Toss to combine.
